The fact that a finite human cannot read an infinite number of pages in a book does not say anything about the finite or infinite nature of the universe.
As it happens, most atheists believe that the universe as we know it did have a beginning, with the Big Bang. We don’t yet know what happened before that. Theists don’t know either. Nobody does.
Atheists believe that whatever happened before that has a natural explanation. Theists accept on faith one imaginary supernatural answer that has absolutely no evidence to support it.
Theists then link this imaginary answer to a whole host of other attributes, such as the imaginary supernatural creator also being a moral guide and lawgiver, who intervenes in the day-to-day activities of one species on one planet in one galaxy.
er… Mike, you shouldn’t have read the article in a literal way. The infinite number of pages were meant to be as an example. Just for a note, the author… Charlie H. Campbell was a former atheist and a champion of your cause.

First, we should not expect to see the word dinosaur in the Bible. The term was not coined until a famous paleontologist, Sir Richard Owen, gave them that name in 1841–nearly eighteen centuries after the New Testament was finished. His rows of scales are his pride” (Job 41:9-10, 13-15a). Scales? Terrible teeth? So fierce that no one would dare wake him up? It is easy to see why numerous Biblical scholars have concluded that Leviathan may have been a dinosaur. ‘

The beginning is not the problem. The problem is that dinosaur is older than the beginning in the bible.
If the Church can explain the Bible, it should have no trouble in explaining the dinosaur.
